- 2 acorn squash
- ½ pound ground Italian sausage
- 1 tablespoon olive oil
- ½ large onion, diced
- 3 cups kale, cleaned and chopped
- 1 tablespoon garlic, minced
- 2 stalks celery, chopped
- ½ large apple, chopped
- ½ teaspoon fresh minced thyme
- 2 sage leaves, minced
- 1 teaspoon minced fresh rosemary
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons walnuts or pecans
- ½ cup crumbled feta cheese
Instructions
- Preheat the oven to 400°F.
- Slice each acorn squash in half and scoop out the seeds.
- Place the squash cut-side down on a lined cookie sheet and bake for 20 minutes.
- In a skillet, cook the ground sausage until fully cooked, then transfer to a plate.
- Sauté diced onions in the same skillet.
- Add chopped kale, garlic, celery, and apple to the onions; cook for 4-5 minutes.
- Mix the cooked sausage with the veggie mixture and incorporate some squash flesh.
- Stuff the squash halves with the filling, and bake for an additional 15 minutes.
- Top with feta cheese and nuts, then bake for 5 more minutes.
