Ingredients

  • 2 acorn squash
  • ½ pound ground Italian sausage
  • 1 tablespoon olive oil
  • ½ large onion, diced
  • 3 cups kale, cleaned and chopped
  • 1 tablespoon garlic, minced
  • 2 stalks celery, chopped
  • ½ large apple, chopped
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves, minced
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  • Preheat the oven to 400°F.
  • Slice each acorn squash in half and scoop out the seeds.
  • Place the squash cut-side down on a lined cookie sheet and bake for 20 minutes.
  • In a skillet, cook the ground sausage until fully cooked, then transfer to a plate.
  • Sauté diced onions in the same skillet.
  • Add chopped kale, garlic, celery, and apple to the onions; cook for 4-5 minutes.
  • Mix the cooked sausage with the veggie mixture and incorporate some squash flesh.
  • Stuff the squash halves with the filling, and bake for an additional 15 minutes.
  • Top with feta cheese and nuts, then bake for 5 more minutes.
