- 1 tablespoon chopped fresh parsley, for serving
Instructions
- Heat olive oil in a large stock pot over medium heat.
- Add Italian sausage and cook until browned, about 5-7 minutes.
- Stir in onion, garlic, carrots, and celery; sauté for 3-4 minutes.
- Add white beans, chicken broth, and Italian seasoning; bring to a simmer.
- Cook for 30 minutes, stirring occasionally.
- Add chopped kale; cook for an additional 5 minutes.
- Serve topped with parmesan cheese and fresh parsley.
