- 1–2 teaspoons chopped fresh dill
- Flaky sea salt
Instructions
- Preheat your oven to 425° F.
- In a large bowl, combine the carrots with olive oil, kosher salt, and black pepper. Toss well to coat.
- Spread the carrots in a single layer on a baking sheet.
- Roast for 15-25 minutes or until the carrots are fork-tender and lightly browned, adjusting the time based on carrot size.
- While the carrots are roasting, whisk together the melted butter and honey in a bowl.
- Once the carrots are done, transfer them to a serving plate and toss with the honey butter mixture. Sprinkle with chopped dill and flaky sea salt before serving.
