- 24 Ritz crackers, broken into quarters (do not crush)
- 1 unbaked 9-inch pie crust (store-bought or homemade)
- ½ teaspoon ground cinnamon
- 1 tablespoon unsalted butter, cut into small pieces
- 1 cup crushed Ritz crackers
- â…“ cup brown sugar
- ½ teaspoon ground cinnamon
- â…“ cup melted butter
Instructions
- Preheat the oven to 425°F.
- In a saucepan, combine hot water, sugar, and cream of tartar. Boil for 1 minute.
- Remove from heat and add lemon juice. Fold in quartered Ritz crackers and let sit for 2 minutes.
- Pour mixture into the unbaked pie crust and sprinkle with cinnamon and butter pieces.
- In a bowl, mix crushed Ritz crackers, brown sugar, and cinnamon with melted butter.
- Sprinkle the topping on the filling and bake for 30–35 minutes until golden brown.
- Cool completely before serving.
