- 1 (15.25 oz) box red velvet cake mix
- 2 large eggs
- â…“ cup butter, melted and cooled slightly
- 2 tsp vanilla extract
- ½ cup powdered sugar (for rolling)
- 4 oz cream cheese, softened
- 4 tbsp unsalted butter, softened
- 1 tsp vanilla extract (for frosting)
- 2 cups powdered sugar (for frosting)
Instructions
- Preheat oven to 375°F and line baking sheets with parchment paper.
- Mix red velvet cake mix, eggs, melted butter, and 2 tsp of vanilla extract until smooth.
- Roll dough in powdered sugar and place on the prepared baking sheet.
- Bake for 7-9 minutes until slightly spread and cracked.
- Cool on tray for 10 minutes before transferring to a wire rack.
- Beat cream cheese and 4 tbsp butter until smooth, then mix in powdered sugar and 1 tsp vanilla.
- Spread frosting on the bottom of one cookie and top with another to create a sandwich.
