- 4 large egg whites (room temperature)
- 1/4 teaspoon cream of tartar
- 1 cup granulated white sugar (superfine if possible)
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- Red gel food coloring
- Green gel food coloring
Instructions
- Preheat oven to 220°F (104°C) and line baking sheets with parchment.
- Whip egg whites and cream of tartar to soft peaks.
- Gradually add sugar while mixing until meringue is glossy and holds stiff peaks.
- Fold in vanilla and almond extracts.
- Stripe a piping bag with red and green gel food coloring.
- Fill the piping bag with meringue and pipe onto baking sheets.
- Bake for 1.5 hours, then turn off the oven and let meringues dry in it.
