Instructions
- Place the Medjool dates in a food processor and blend until finely chopped.
- Add freeze-dried raspberries and pulse until powdered.
- Mix in remaining ingredients until smooth and sticky.
- Check consistency; adjust with hot water or coconut if needed.
- Roll mixture into firm balls and place on a lined plate.
- Optionally, roll balls in shredded coconut and raspberry dust.
- Freeze for 30 minutes to firm up.
- Store in an airtight container.
