Instructions
- Whisk together flour, baking soda, salt, and pumpkin spice in a medium bowl.
- Cream together butter, granulated sugar, and brown sugar in a large mixing bowl until fluffy.
- Add eggs and pumpkin puree, mixing until smooth.
- Gradually combine dry ingredients with the wet mixture, stirring gently.
- Pipe the batter onto prepared baking sheets, spacing 2 inches apart.
- Bake at 350°F for 8-10 minutes or until set and dry.
- Cool completely on a wire rack.
- Beat cream cheese and butter until smooth, then add vanilla.
- Gradually mix in confectioner's sugar until desired consistency.
- Assemble by piping frosting on half the cookies and topping with another cookie.
