Instructions
- Whisk together pumpkin pie spice, salt, baking soda, and flour in a bowl and set aside.
- Cream softened butter and brown sugar until smooth.
- Add eggs and vanilla extract to the mixture, beating until combined.
- Gradually mix in the dry ingredients until just combined.
- Fold in quick-cooking oats until evenly distributed.
- Scoop 2-tablespoon sized balls of dough onto a baking sheet, cover, and chill for at least 1 hour.
- Preheat the oven to 350°F (175°C).
- Line cookie sheets with parchment paper, and space dough balls 2 inches apart.
- Bake for 10-12 minutes until edges are golden and centers look soft.
- Cool on baking sheets for 10 minutes before transferring to a wire rack.
