- ½ cup pumpkin puree
- ¼ cup apple cider
- 2 ½ tablespoons packed brown sugar
- ½ teaspoon pumpkin pie spice
- Pinch of salt
- 1 sheet puff pastry, thawed but still cold
- ¼ cup pecans, chopped
- ½ cup pumpkin butter
- 8-ounce wheel of brie
- 1 egg
- Coarse sugar for sprinkling (optional)
- Cinnamon stick & fresh sage for garnish (optional)
Instructions
- Preheat oven to 400ºF.
- Roll puff pastry into a 10-inch square.
- Create a circle with chopped pecans and pumpkin butter at the center.
- Cut top rind off the brie and place it over the mixture.
- Fold pastry corners over brie, brushing with egg wash at each fold.
- Wrap brie with cooking twine and tie securely.
- Transfer to a parchment-lined baking sheet.
- Brush with egg wash mixture and sprinkle coarse sugar.
- Bake for 20-35 minutes until golden brown.
- Cool for 10-15 minutes, then remove twine and garnish.
