  • 1/2 cup brown sugar (for topping)
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  • Combine flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves in a bowl.
  • In another bowl, mix pumpkin puree, milk, melted butter or oil, and vanilla extract.
  • Fold wet mixture into the dry mixture until thick batter forms.
  • Pour batter into greased casserole dish, spreading evenly.
  • Mix granulated sugar, brown sugar, and chopped pecans, and layer over batter.
  • Carefully pour very hot water over the cobbler mixture.
  • Bake in preheated oven at 350°F for about 40 minutes until set.
  • Allow to cool for 5-10 minutes before serving.
