- 3 pounds (approximately 8-10 medium) russet potatoes, peeled and thinly sliced
- 6 tablespoons unsalted butter
- ½ yellow onion, diced
- ½ cup all-purpose flour
- 2 teaspoons kosher salt
- ½ teaspoon pepper
- 3 cups whole milk, room temperature
- 2 cups sharp cheddar cheese, shredded and divided
- Parsley, for garnish
Instructions
- Melt butter in a saucepan and sauté onions for 3-5 minutes.
- Stir in flour, salt, and pepper to create a roux, cooking for about 1 minute.
- Gradually whisk in milk, cooking until thickened for 5-8 minutes.
- Remove from heat and stir in 1 cup of shredded cheddar until melted.
- Layer sliced potatoes in a greased baking dish and pour cheese sauce over them.
- Top with remaining shredded cheese and cover with foil.
- Bake at 375°F for about 60 minutes until fork-tender.
- Broil for 2-3 minutes to achieve a golden top.
