- 1 cup finely chopped or blended Bartlett pears
- ½ cup organic sugar
- ½ cup water
- ¼ cup vanilla syrup
- 1 ½ oz gin (about 3 tablespoons)
- 2 tablespoons pear purée syrup
- ¾ cup soda water
- Crushed ice (to top)
Instructions
- Chop or blend the Bartlett pears until smooth.
- Combine pears, sugar, water, and vanilla syrup in a saucepan; heat until boiling.
- Reduce heat and simmer for 5-8 minutes until liquid is amber and pears break down.
- Strain the mixture into a container, pressing to extract syrup; cool before use.
- Mix gin with 2 tablespoons of pear vanilla syrup in a glass; stir.
- Add soda water and stir gently; top with crushed ice.
