- 3/4 cup natural peanut butter
- 1/3 cup honey
- 2 tablespoons salted butter
- 1/4 cup brown sugar packed
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 3 cups rolled oats
- 1/2 cup roughly chopped roasted peanuts
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a microwave-safe bowl, mix peanut butter, honey, butter, brown sugar, and cinnamon. Heat in 30-second intervals while stirring until smooth.
- Stir in vanilla extract into the warm peanut butter mixture.
- In a large bowl, combine rolled oats and chopped roasted peanuts. Pour the peanut butter mixture over them and mix well until coated.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 30 minutes, stirring halfway through for even toasting.
- Allow the granola to cool completely on the baking sheet before adding the chocolate chips.
- Once cooled, transfer the granola to an airtight container. Enjoy!
