  • 2 tablespoons salted butter
  • 1/4 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1/2 cup roughly chopped roasted peanuts
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a microwave-safe bowl, mix peanut butter, honey, butter, brown sugar, and cinnamon. Heat in 30-second intervals while stirring until smooth.
  3. Stir in vanilla extract into the warm peanut butter mixture.
  4. In a large bowl, combine rolled oats and chopped roasted peanuts. Pour the peanut butter mixture over them and mix well until coated.
  5. Spread the mixture evenly on the prepared baking sheet.
  6. Bake for 30 minutes, stirring halfway through for even toasting.
  7. Allow the granola to cool completely on the baking sheet before adding the chocolate chips.
  8. Once cooled, transfer the granola to an airtight container. Enjoy!
