Instructions
- Pat dry the steaks and let them rest at room temperature for 30-45 minutes.
- Heat oil in a skillet over medium-high heat until shimmering.
- Sear the steaks for 4-5 minutes without moving them.
- Flip the steaks and cook for another 2-3 minutes until desired doneness.
- Sear the edges for 10-15 seconds each to lock in flavor.
- Let the steaks rest for 5 minutes on a plate or cutting board.
- Mix gorgonzola butter ingredients in a bowl until combined.
- Spread the melted gorgonzola butter over the warm steaks just before serving.
