Instructions
- Combine salt, black pepper, smoked paprika, garlic powder, onion powder, and ground rosemary in a bowl to create the dry rub.
- Preheat oven to 500℉. Line a roasting pan with aluminum foil.
- Pat the tri-tip roast dry and rub oil over it, then apply the dry rub generously.
- Allow the roast to sit at room temperature for 30 minutes.
- Roast at 500°F for 15 minutes, then reduce the temperature to 350°F and roast for an additional 25-30 minutes until reaching desired doneness.
- Let the roast rest for 10-15 minutes before slicing against the grain.
