Instructions
- Preheat the oven to 350°F (175°C).
- Rub the pork roast with olive oil and garlic, and season with salt, pepper, and rosemary.
- Roast the pork for 30 minutes in a foil-lined pan.
- In a saucepan, combine pomegranate juice, red wine, and orange marmalade; bring to boil and reduce to a syrupy glaze in 5-7 minutes.
- Whisk in Dijon mustard and pour the glaze over the pork.
- Continue roasting for an additional 25-30 minutes until the internal temperature reaches 145°F (63°C).
- Let the roast rest for 10 minutes before slicing.
