Instructions
- Brown the Italian sausage in a large pot over medium heat for 8-10 minutes.
- Sauté the diced onions in the pot for 3-5 minutes until translucent.
- Stir in tomatoes, tomato paste, broth, garlic, Italian seasoning, salt, and pepper, and bring to simmer.
- Add tortellini and cream, mixing well, then let simmer.
- Incorporate fresh spinach and simmer for another 8-10 minutes until the tortellini is tender.
- Serve in bowls topped with shaved Parmesan cheese.
