  • 1 tbsp fresh lemon juice (optional)
  • 1/4 cup water (optional)
  • 1 tsp vanilla extract (optional)

Instructions

  • Preheat the oven to 325°F and prepare a 9-inch springform pan.
  • Combine graham cracker crumbs, melted butter, brown sugar, and vanilla for the crust; press into the pan.
  • Beat cream cheese until smooth, then add sugar and mix well.
  • Incorporate eggs one by one, then add sour cream, heavy cream, and vanilla.
  • Gently mix in cornstarch and pour the filling into the crust.
  • Place the springform pan in a roasting pan and add hot water halfway up the sides.
  • Bake for 85-90 minutes, then cool inside the oven for 10 minutes.
  • Chill in the refrigerator for at least 6 hours or overnight.
  • For the optional strawberry topping, cook strawberries, water, lemon juice, and sugar until thickened, then serve on top.
