  • 4 russet potatoes
  • kosher salt and pepper
  • 1 tablespoon olive oil
  • 8 ounces baby bella mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 pound lean ground beef
  • 1 teaspoon dijon mustard
  • 8 ounces gruyere cheese, freshly grated
  • 4 green onions, thinly sliced
  • ½ cup mayonnaise
  • â…“ cup dijon mustard
  • 1 teaspoon honey

Instructions

  1. Preheat the oven to 425 degrees F. Scrub the potatoes clean, pat them dry then rub with olive oil. Poke holes all over with a fork. Sprinkle with kosher salt and pepper.
  2. Bake the potatoes for 60 to 90 minutes, or until they are fork tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the mushrooms and garlic, cooking for about 5 minutes until the mushrooms are soft. Sprinkle with salt and pepper and transfer to a plate.
  4. In the same skillet, add ground beef. Season with salt and pepper, cooking until browned and crisp. Stir in dijon mustard, then add the mushrooms back in and mix. Sprinkle with cheese and stir.
  5. Once the potatoes are baked, slice them open and gently pull apart. Fill with the beef and mushroom mixture. Drizzle with dijon sauce and top with cheese.
  6. Return the stuffed potatoes to the oven for 10 minutes to melt the cheese. Remove, drizzle with more dijon sauce, top with green onions, and serve.
