- 1 ½ cups mixed berries, fresh or frozen; if frozen, no need to thaw
Instructions
- In a blender, combine almond milk, cottage cheese, egg, maple syrup, and vanilla. Blend until smooth and creamy.
- In a large mixing bowl, mix the oats, baking powder, cinnamon, and sea salt.
- Pour the blended mixture into the dry ingredients and stir well to combine.
- Gently fold in the mixed berries, adding a splash of almond milk if the mixture is too thick.
- Scoop the batter into a greased or lined muffin tin.
- Bake at 350°F for 25 to 30 minutes, until the tops are set and lightly golden.
- Allow cooling completely before removing from the tin.
