- 1 egg, room temperature
- 1 egg yolk, room temperature
- 1 to 1 ½ teaspoons mint extract
- 5 to 10 drops green gel food coloring
- 1 cups semi-sweet chocolate chips
- 2 ounces bittersweet chocolate, chopped
Instructions
- Whisk together the flour, corn starch, baking powder, baking soda, and salt in a bowl.
- In a separate large mixing bowl, cream the butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 3 to 4 minutes.
- Add the egg, egg yolk, mint extract, and food coloring, mixing until creamy.
- Gradually mix in the flour mixture until just combined.
- Fold in the chocolate chips and chopped chocolate.
- Scoop out 3 tablespoons of cookie dough, roll into smooth balls, and place on a parchment-lined baking sheet. Chill in the refrigerator for at least one hour or overnight.
- Preheat the oven to 325°F (163°C).
- Place the chilled dough balls on a baking sheet, spacing them about 3 inches apart.
- Bake for 12 to 15 minutes, until the edges are lightly browned.
- Allow cookies to cool on the baking sheet for 10 minutes, then transfer to wire racks to cool completely.
