- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- Pulse Oreo cookies and melted butter in a food processor to make crumbs.
- Press the mixture into the cupcake liners to form the crust.
- Beat cream cheese and sugar until smooth; add eggs and vanilla.
- Mix in red food coloring to achieve desired pink stage.
- Fill each liner with the cream cheese mixture.
- Bake for 15-17 minutes; centers should jiggle slightly.
- Cool completely, then refrigerate for around 2 hours until firm.
- Top with whipped cream and sprinkle with Valentine’s decorations before serving.
