  • 4 teaspoons garlic, minced
  • 1 medium zucchini, diced (about 2 cups)
  • 1 can (15 ounces) petite diced tomatoes, with juices (undrained)
  • 2 tablespoons tomato paste
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 6 cups (48 ounces) chicken broth
  • 2 teaspoons Italian seasoning
  • ½ teaspoon kosher salt
  • 1 ½ cups (140 g) ditalini pasta, uncooked
  • 2 cups (60 g) fresh baby spinach, roughly chopped

Instructions

  • Cook ground Italian sausage in a large pot over medium heat until browned; drain excess grease.
  • Sauté diced onion, carrots, and celery in olive oil until softened; add garlic and zucchini for another 2 minutes.
  • Return sausage to the pot; stir in tomatoes, tomato paste, beans, broth, seasoning, and salt. Bring to a boil.
  • Reduce heat and simmer for about 15 minutes to meld flavors.
  • Stir in ditalini pasta; cook until al dente, about 8-10 minutes.
  • Add spinach and cook until wilted; serve warm.
