- 1 pound ground Italian sausage (mild or hot)
- 2 tablespoons extra virgin olive oil
- 1 medium yellow onion, diced (about 1 cup)
- 2 medium carrots, diced
- 2 ribs celery, diced
- 4 teaspoons garlic, minced
- 1 medium zucchini, diced (about 2 cups)
- 1 can (15 ounces) petite diced tomatoes, with juices (undrained)
- 2 tablespoons tomato paste
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 6 cups (48 ounces) chicken broth
- 2 teaspoons Italian seasoning
- ½ teaspoon kosher salt
- 1 ½ cups (140 g) ditalini pasta, uncooked
- 2 cups (60 g) fresh baby spinach, roughly chopped
Instructions
- Cook ground Italian sausage in a large pot over medium heat until browned; drain excess grease.
- Sauté diced onion, carrots, and celery in olive oil until softened; add garlic and zucchini for another 2 minutes.
- Return sausage to the pot; stir in tomatoes, tomato paste, beans, broth, seasoning, and salt. Bring to a boil.
- Reduce heat and simmer for about 15 minutes to meld flavors.
- Stir in ditalini pasta; cook until al dente, about 8-10 minutes.
- Add spinach and cook until wilted; serve warm.
