Ingredients

  • 3 pounds sweet potatoes, washed, peeled, and cut into 1" cubes
  • 3 teaspoons salt, divided
  • 1/4 cup butter, plus 2 tablespoons for garnish
  • 1/2 cup half & half
  • 1/2 cup dark brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons parsley, chopped

Instructions

  • Place sweet potatoes in a large pot and cover with hot water.
  • Add 2 teaspoons of salt, bring to boil, and then simmer for 20-30 minutes until tender.
  • Drain water and return sweet potatoes to the pot.
  • Add butter, half & half, brown sugar, and remaining salt, and mash to desired consistency.
  • Scoop into a serving dish, top with butter and parsley, and serve.
