- 3 pounds sweet potatoes, washed, peeled, and cut into 1" cubes
- 3 teaspoons salt, divided
- 1/4 cup butter, plus 2 tablespoons for garnish
- 1/2 cup half & half
- 1/2 cup dark brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons parsley, chopped
Instructions
- Place sweet potatoes in a large pot and cover with hot water.
- Add 2 teaspoons of salt, bring to boil, and then simmer for 20-30 minutes until tender.
- Drain water and return sweet potatoes to the pot.
- Add butter, half & half, brown sugar, and remaining salt, and mash to desired consistency.
- Scoop into a serving dish, top with butter and parsley, and serve.
