- 2 cups baby spinach
- ½ cup mayonnaise
- ½ cup sour cream
- ½ cup Italian dressing
- ⅓ cup Parmesan cheese, grated
- 1 tablespoon oil from sun-dried tomatoes
- 2 cloves garlic, minced
- ¼ cup fresh basil leaves, chopped
- ¼ teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Combine tortellini, cherry tomatoes, sun-dried tomatoes, basil, shredded Parmesan, and spinach in a bowl.
- Whisk mayonnaise, sour cream, Italian dressing, grated Parmesan, oil from sun-dried tomatoes, garlic, chopped basil, red pepper flakes, salt, and pepper in another bowl.
- Fold dressing into the pasta salad mixture until evenly coated.
- Chill in the refrigerator for at least 4 hours.
- Garnish with additional cherry tomatoes and basil before serving.
