- 1 teaspoon kosher salt
- ¼ teaspoon red pepper flakes
- Zest and juice of 1 lemon
- 1 tablespoon fresh mint
- 1 tablespoon balsamic vinegar
- 3 cloves garlic (crushed or sliced thinly)
- 1 tablespoon fresh parsley
Instructions
- Drain and dry the mozzarella balls thoroughly.
- Finely chop the rosemary, thyme, basil, and mint; crush peppercorns.
- Mix olive oil with herbs, salt, red pepper flakes, lemon juice, and balsamic vinegar.
- Add mozzarella to a jar and pour the marinade over the cheese.
- Cover and refrigerate for at least one hour; up to three days for more flavor.
- Serve on skewers or with salads, bread, or veggies.
