- 1/2 cup butter softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla
- 1 & 1/3 cup + 1 tbsp all purpose flour
- 2 teaspoon cornstarch
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup lucky charms marshmallows
Instructions
- Preheat the oven to 350F and prepare a large baking sheet with parchment paper.
- In a stand mixer, beat together the butter, granulated sugar, and brown sugar with the paddle attachment until fluffy and light in color.
- Add the egg and vanilla, mixing for another 30 seconds until well combined.
- Mix in the flour, cornstarch, baking soda, baking powder, and salt until just combined, and then gently fold in the lucky charms marshmallows.
- Use a small cookie scoop to form cookie dough balls, coat them with additional marshmallows, and place them on the baking sheet with 2 inches of space between each cookie.
- Bake the cookies for 8 minutes, then let them cool on the cookie sheet for 5-10 minutes before transferring them to a cooling rack.
