  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon pink food coloring (or a few drops of red food coloring)
  • 2 tablespoons rainbow sprinkles

Instructions

  • Cream together the powdered sugar, margarine, and unsalted butter.
  • Add the egg and extracts, mixing until smooth.
  • Whisk and combine dry ingredients, then add to wet ingredients.
  • Wrap dough in plastic and refrigerate for at least 1 hour.
  • Preheat oven to 350°F (175°C) and prepare baking sheets.
  • Scoop and shape dough, placing on the sheets with space in between.
  • Bake for 8-10 minutes until edges are set and tops are golden.
  • Cool on baking sheets for 5 minutes before transferring to wire racks.
  • Beat butter for frosting until creamy, then add powdered sugar, vanilla, milk, and salt.
  • Incorporate food coloring and frost cooled cookies, topping with sprinkles.
