  • 1 refrigerated pie crust
  • 1½ cups chopped cooked ham
  • 1½ cups frozen diced hash brown potatoes, thawed
  • 1½ cups shredded cheddar cheese
  • 3 green onions, sliced (about 3 tbsp)
  • 5 eggs
  • ¾ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 3 slices bacon, crisply cooked, crumbled
  • sour cream, if desired
  • Additional sliced green onions, if desired

Instructions

  1. Preheat the oven to 350℉.
  2. Place the pie crust into a 9-inch pie plate, crimping the edges if desired.
  3. Layer the ham, hash browns, cheese, and green onions in the crust.
  4. In a medium bowl, beat together the eggs, milk, salt, and pepper until well combined. Pour this mixture over the layered ingredients in the crust.
  5. Bake for approximately 1 hour and 5 minutes, or until a knife inserted into the center comes out clean.
  6. Allow to rest for 10-15 minutes before slicing. Serve with bacon, sour cream, and additional onions or cheese if desired.
