Lime curd is a creamy, tart delight that makes every meal special. Use it in desserts, as a spread, or to add a zesty kick to your favorite dishes.

Ingredients

  • 3 large eggs
  • ¾ cup (150g) granulated sugar
  • Pinch of salt
  • ½ cup fresh lime juice (or bottled Key Lime juice)
  • Zest of 1 large or two small limes (or Key limes)
  • 4 tablespoons (57g) unsalted butter, diced

Instructions

  • Whisk together eggs, sugar, salt, lime juice, and zest in a medium saucepan until smooth.
  • Place saucepan over low heat and stir continuously for 4-5 minutes until thickened.
  • Lower heat and add diced butter, stirring until it melts and mixture is smooth.
  • Strain the mixture through a fine mesh strainer into a clean jar or container.
