- Zest of 1 large or two small limes (or Key limes)
- 4 tablespoons (57g) unsalted butter, diced
Instructions
- Whisk together eggs, sugar, salt, lime juice, and zest in a medium saucepan until smooth.
- Place saucepan over low heat and stir continuously for 4-5 minutes until thickened.
- Lower heat and add diced butter, stirring until it melts and mixture is smooth.
- Strain the mixture through a fine mesh strainer into a clean jar or container.
