- 2 tablespoons whole grain mustard or Dijon mustard
- 3 cloves garlic, pressed
- 3 teaspoons cracked black pepper
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 2 large chicken breasts, cut in half lengthwise
- Salt, to taste
- 2 shallots or 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon heaped flour
- ½ cup white wine
- ¾ cup chicken stock
- ½ cup black olives (optional)
- 1 tablespoon chopped parsley, for garnish
Instructions
- Mix the marinade ingredients in a bowl.
- Marinate chicken for at least 30 minutes.
- Sear marinated chicken in olive oil until golden.
- Sauté shallots and garlic in the same skillet.
- Add flour, reserved marinade, and white wine; cook until thick.
- Add chicken stock and return chicken to skillet; simmer for 20 minutes.
- Garnish with parsley and serve.
