- ⅓ cup brown sugar, packed
- ¼ cup granulated sugar (for streusel)
- ½ tsp ground cinnamon
- 6 tbsp cold unsalted butter, cubed (for streusel)
- ¾ cup powdered sugar (for glaze)
- 2 tbsp fresh lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C) and prepare a baking dish.
- Whisk together dry ingredients: flour, baking powder, baking soda, and salt.
- Cream butter, sugar, and lemon zest until fluffy.
- Add eggs, vanilla, lemon juice, and yogurt; beat until smooth.
- Gradually mix in dry ingredients until just combined.
- Fold in blueberries gently.
- Pour batter into prepared dish and smooth the top.
- Mix streusel ingredients and sprinkle over batter.
- Bake for 40-50 minutes or until a toothpick comes out clean.
- Cool, then glaze with a mixture of powdered sugar and lemon juice.
