  • ½ cup sugar

  • 2 cups flour
  • 3 cups sugar
  • 1 cup flour
  • 6 large eggs room temperature
  • 1 cup lemon juice fresh is best, about 4 lemons
  • 2 tablespoons lemon zest
  • Confectioners’ sugar for dusting

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a 9×13 inch pan with parchment paper.
  3. For the crust, mix together melted butter, sugar, and vanilla in a medium bowl.
  4. Add 2 cups of flour and stir until combined.
  5. Press the mixture firmly into the prepared pan and bake for 15-20 minutes, or until the edges turn light brown.
  6. In a large bowl, combine 3 cups of sugar and 1 cup of flour; whisk to remove any lumps.
  7. Add eggs, lemon zest, and lemon juice to the dry mixture and whisk until smooth.
  8. Pour the lemon filling over the warm crust. Bake for 30-35 minutes or until the center is set and no longer jiggles.
  9. Allow to cool completely at room temperature before refrigerating.
  10. Dust with powdered sugar before serving.
