- 1 cup butter melted
- ½ cup sugar
- 1½ teaspoons vanilla
- 2 cups flour
- 3 cups sugar
- 1 cup flour
- 6 large eggs room temperature
- 1 cup lemon juice fresh is best, about 4 lemons
- 2 tablespoons lemon zest
- Confectioners’ sugar for dusting
Instructions
- Preheat your oven to 350 degrees.
- Line a 9×13 inch pan with parchment paper.
- For the crust, mix together melted butter, sugar, and vanilla in a medium bowl.
- Add 2 cups of flour and stir until combined.
- Press the mixture firmly into the prepared pan and bake for 15-20 minutes, or until the edges turn light brown.
- In a large bowl, combine 3 cups of sugar and 1 cup of flour; whisk to remove any lumps.
- Add eggs, lemon zest, and lemon juice to the dry mixture and whisk until smooth.
- Pour the lemon filling over the warm crust. Bake for 30-35 minutes or until the center is set and no longer jiggles.
- Allow to cool completely at room temperature before refrigerating.
- Dust with powdered sugar before serving.
