  • 3 tablespoons tomato paste
  • 3 carrots, diced
  • 3 parsnips, diced
  • 2 stalks celery, diced
  • 2 tablespoons salted butter, melted
  • 1 cup Guinness
  • ½ cup bone broth
  • 2 pounds Yukon gold potatoes (or leftover mashed potatoes)
  • ¼ cup salted butter
  • 4 cloves garlic
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons sour cream
  • ½ teaspoon onion powder
  • Pinch of salt
  • Pinch of black pepper

Instructions

  • Preheat the oven to 375°F.
  • Sauté diced onions in olive oil until translucent.
  • Add tomato paste, stir in Guinness and melt butter, then cook.
  • Stir in carrots, parsnips, celery, crushed garlic, and thyme; cook together.
  • Boil salted water and cook diced Yukon gold potatoes until tender.
  • Drain and mash potatoes with butter, garlic, Worcestershire sauce, sour cream, and seasoning.
  • Mix turkey with sage, then add remaining Guinness and broth; simmer.
  • Pipe mashed potatoes over turkey filling, then bake until golden brown.
