Instructions
- Mix honey and dark brown sugar in a bowl and microwave until dissolved.
- Incorporate unsalted butter and lemon zest; stir until butter melts.
- Combine dry ingredients, then add the beaten egg and mix.
- Gradually include all-purpose flour and ground almonds until a soft dough forms.
- Cover and rest the dough for at least an hour or overnight.
- Preheat the oven to 350°F (175°C).
- Prepare the glaze with powdered sugar, lemon juice, and vanilla extract.
- Roll out the dough and cut into desired shapes.
- Bake cookies for about 12 minutes.
- Glaze warm cookies and allow to dry.
