Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • ¼ cup minced garlic
  • 1 ½ cups sliced carrots (about 3 large)
  • 45 ounces great northern beans (3 cans, 15 oz. each)
  • 4 cups chicken broth
  • ½ teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups chopped kale (about ½ a bunch, de-stemmed and chopped)
  • 1 cup half and half (or milk substitute)

Instructions

  • Brown Italian sausage in a large pot over medium heat.
  • Add diced onion and sauté until soft and translucent.
  • Stir in sliced carrots and minced garlic, cooking for another minute.
  • Add great northern beans, oregano, basil, salt, black pepper, and chicken broth.
  • Bring to a simmer and cook for 10-15 minutes until carrots are tender.
  • Stir in kale and half and half, cooking until kale is wilted.
  • Serve hot, ladled into bowls.
