- 1 pound Italian sausage
- 1 onion, diced
- ¼ cup minced garlic
- 1 ½ cups sliced carrots (about 3 large)
- 45 ounces great northern beans (3 cans, 15 oz. each)
- 4 cups chicken broth
- ½ teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 cups chopped kale (about ½ a bunch, de-stemmed and chopped)
- 1 cup half and half (or milk substitute)
Instructions
- Brown Italian sausage in a large pot over medium heat.
- Add diced onion and sauté until soft and translucent.
- Stir in sliced carrots and minced garlic, cooking for another minute.
- Add great northern beans, oregano, basil, salt, black pepper, and chicken broth.
- Bring to a simmer and cook for 10-15 minutes until carrots are tender.
- Stir in kale and half and half, cooking until kale is wilted.
- Serve hot, ladled into bowls.
