- 1/4 cup extra virgin olive oil
- 2 1/2 tablespoons lemon juice
- 1 tablespoon minced shallot
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1 tablespoon cooking oil
- 1/2 cup whole almonds, chopped
- 1 large bunch kale, stem removed and leaves very thinly sliced
- 1 green apple, julienned
- 2/3 cup grated Manchego cheese
Instructions
- Heat cooking oil in a skillet over medium-high heat.
- Add chopped almonds and toast until golden brown, about 4-5 minutes.
- In a jar, combine olive oil, lemon juice, minced shallot, Dijon mustard, honey, kosher salt, and black pepper. Shake or whisk until blended.
- In a large bowl, add kale and pour 1/4 of the dressing over it. Massage the kale to tenderize.
- Add toasted almonds, julienned apple, and grated Manchego cheese to the kale.
- Drizzle remaining dressing over the salad and toss gently.
- Serve immediately.
