Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon minced shallot
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon cooking oil
  • 1/2 cup whole almonds, chopped
  • 1 large bunch kale, stem removed and leaves very thinly sliced
  • 1 green apple, julienned
  • 2/3 cup grated Manchego cheese

Instructions

  • Heat cooking oil in a skillet over medium-high heat.
  • Add chopped almonds and toast until golden brown, about 4-5 minutes.
  • In a jar, combine olive oil, lemon juice, minced shallot, Dijon mustard, honey, kosher salt, and black pepper. Shake or whisk until blended.
  • In a large bowl, add kale and pour 1/4 of the dressing over it. Massage the kale to tenderize.
  • Add toasted almonds, julienned apple, and grated Manchego cheese to the kale.
  • Drizzle remaining dressing over the salad and toss gently.
  • Serve immediately.
