Ingredients

  • 4 large eggs

  • 1 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 15 oz pumpkin purée
  • 3/4 cup vegetable oil
  • 2/3 cup water

Instructions

  • Preheat oven to 350ºF and line an 8×4 inch loaf pan with parchment paper.
  • Mix dry ingredients in a bowl: flour, sugar, baking soda, salt, allspice, baking powder, nutmeg, cinnamon, and cloves.
  • In another bowl, whisk wet ingredients: eggs, pumpkin purée, vegetable oil, and water.
  • Combine wet and dry mixtures, mixing gently until just moistened.
  • Pour batter into the prepared loaf pan.
  • Bake for 50-55 minutes, checking for doneness with a toothpick.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
