  • 1 cup (125g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup (175g) corn (fresh, frozen, or canned)

Instructions

  • Melt butter in a skillet over low heat and let cool.
  • Preheat oven to 400°F (204°C).
  • Whisk together melted butter, honey, egg, and buttermilk in a bowl.
  • In another bowl, combine cornmeal, flour, baking powder, baking soda, and salt.
  • Pour wet ingredients into dry ingredients and mix gently.
  • Fold in corn kernels and ensure skillet is hot before adding batter.
  • Pour batter into skillet and bake for about 20 minutes until golden.
