- 1 cup (240ml) buttermilk, at room temperature
- 1 cup (120g) cornmeal
- 1 cup (125g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup (175g) corn (fresh, frozen, or canned)
Instructions
- Melt butter in a skillet over low heat and let cool.
- Preheat oven to 400°F (204°C).
- Whisk together melted butter, honey, egg, and buttermilk in a bowl.
- In another bowl, combine cornmeal, flour, baking powder, baking soda, and salt.
- Pour wet ingredients into dry ingredients and mix gently.
- Fold in corn kernels and ensure skillet is hot before adding batter.
- Pour batter into skillet and bake for about 20 minutes until golden.
- Let cool for a few minutes and serve warm.
