- 1⅓ cups oat milk or any milk, room temperature
- ¾ cup maple syrup
- 1 tablespoon vanilla extract
- Healthy vanilla buttercream frosting (1 or 2 batches, depending on preference)
- Dairy-free chocolate frosting (1 or 2 batches, depending on preference)
Instructions
- Preheat the oven to 350°F (175°C) and prepare cake pans with grease and parchment.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- Beat egg whites in a large bowl until stiff peaks form and set aside.
- Cream the butter and Greek yogurt, then mix in maple syrup and vanilla.
- Alternate adding dry ingredients and oat milk to the butter mixture.
- Gently fold in the whipped egg whites until combined.
- Divide batter between prepared pans and bake for 20-25 minutes.
- Cool cakes in pans for 10 minutes, then transfer to wire racks.
- Frost with preferred buttercream or chocolate frosting.
