- 7 Medjool dates, pitted
- 2 tablespoons cashew butter
- 1/4 cup almond flour
- 1 teaspoon vanilla extract
- 1 teaspoon hot water (optional)
- Pinch of sea salt
- 3/4 to 1 cup dark chocolate chips
- 1/2 teaspoon tahini (optional)
Instructions
- Chop Medjool dates until finely chopped.
- Process freeze-dried strawberries until powder-like.
- Combine all base ingredients in a food processor and blend until combined.
- Check the dough consistency and adjust with water or almond flour if needed.
- Shape the mixture into balls and refrigerate for 30 minutes.
- Melt chocolate chips over low heat or in the microwave.
- Dip each truffle in melted chocolate and place on a cooling rack.
- Store in an airtight container in the refrigerator or freeze.
