Ingredients

  • 4 teaspoons vegetable oil divided use
  • 2 cups ham cut into 1/2 inch pieces
  • 2/3 cup onion chopped
  • 1/2 cup carrots peeled, quartered and sliced
  • 1/2 cup frozen peas thawed
  • 2 teaspoons minced garlic
  • 2 eggs lightly beaten
  • 3 cups cooked long grain white rice
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon toasted sesame oil
  • salt and pepper to taste
  • 1/4 cup green onions thinly sliced

Instructions

  1. Heat 2 teaspoons of oil in a large pan over medium high heat.
  2. Place the ham in a single layer in the pan. Cook for 2-3 minutes, stirring occasionally, or until meat is browned.
  3. Remove the ham from the pan. Place it on a plate and cover with foil to keep warm.
  4. Pour 1 teaspoon of oil into the pan, then add the onion and carrots. Cook for 5-6 minutes or until softened. Season with salt and pepper to taste.
  5. Add the garlic and cook for 30 seconds.
  6. Remove the vegetables from the pan and place on the plate with the ham, covering to keep warm.
  7. Pour the remaining teaspoon of oil into the pan, add the eggs and cook, stirring occasionally, until scrambled, about 3 minutes. Season with salt and pepper to taste.
  8. Add the rice, ham, cooked veggies, and peas into the pan and stir to combine.
  9. Stir in the soy sauce and sesame oil, cooking until everything is thoroughly combined and warmed through, about 4-5 minutes.
  10. Sprinkle green onions over the top, then serve and enjoy.
