- 1 medium onion, diced

- 1 medium potato, peeled and diced
- 2–3 cloves garlic, minced
- 5 mushrooms, diced
- 4 sprigs of rosemary or thyme, minced
- 2 tablespoons olive oil
- 1 cup frozen peas, thawed
- 1 pound ground beef (450g)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 17 oz puff pastry (500g)
- Flour for rolling
- 1 beaten egg, for egg wash
Instructions
- Preheat the oven to 350°F (180°C).
- Sauté onion, carrot, celery, potato, and garlic in olive oil until tender.
- Add mushrooms and herbs; cook until softened.
- Mix vegetable mixture with ground beef and peas, seasoning with salt and pepper.
- Roll out puff pastry; place the beef mixture in the center.
- Seal pastry around the filling and brush with beaten egg.
- Bake for 45 minutes to 1 hour until golden brown; rest before slicing.
