- 2 1/2 tablespoons unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- Pulse Oreos in a food processor until crumbly, then mix with melted butter.
- Divide and press Oreo mixture into cupcake liners to form crust.
- Beat cream cheese and sugar until smooth; add eggs one at a time and vanilla.
- Incorporate neon green food coloring until desired color is achieved.
- Fill cup liners with cheesecake mixture, about 1/4 cup each.
- Bake for 15-17 minutes until slightly jiggly in the center.
- Cool completely in the pan, then refrigerate for a couple of hours.
- Top with whipped cream and festive sprinkles before serving.
