Instructions
- Trim visible fat from chicken and pound to even thickness.
- Season both sides of chicken with salt and pepper.
- Mix olive oil, lemon juice, garlic, shallot, and thyme in a bowl.
- Pour marinade over chicken and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Grill chicken for 8-10 minutes per side or until cooked to 165°F.
- Let chicken rest for 5 minutes before serving.
