- 1 1/4 pounds boneless skinless chicken thighs or breasts
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 1/2 cup packed basil leaves
- 3 tablespoons olive oil
- 1 shallot (about 1/4 cup diced)
- 2 tablespoons Champagne vinegar
- 1 clove grated garlic (about 1/2 teaspoon)
- 2 teaspoons honey
- Pinch of red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Preheat and prepare the grill to 400° F, cleaning and oiling the grates.
- In a small bowl, mix smoked paprika, garlic powder, salt, and black pepper, then season the chicken.
- Grill seasoned chicken for 5-6 minutes on one side, flip and cook until internal temperature reaches 165° F.
- Remove chicken and let it rest for a few minutes.
- In a blender, combine basil leaves, olive oil, shallot, Champagne vinegar, garlic, honey, and red pepper flakes; purée until smooth.
- Adjust seasoning of the dressing and pour into a serving vessel.
- Serve grilled chicken warm with basil dressing drizzled on top.
