- 1.5 lbs fresh green beans, trimmed
- 2 tbsp canola oil
- 1 small yellow onion, thinly sliced
- 8 oz baby bella mushrooms, sliced
- 4 garlic cloves, minced
- 5 tbsp all-purpose flour
- 3 cups whole milk
- 1 cup heavy whipping cream
- Salt to taste
- Fresh cracked black pepper to taste
- 2 large yellow onions, thinly sliced (for frying)
- 2 cups low-fat buttermilk
- 3 cups all-purpose flour (for coating)
- 1–2 tsp coarse kosher salt (less if using table salt)
- 1/2 tsp black pepper
- 1 tsp garlic powder
Instructions
- Soak sliced onions in low-fat buttermilk for 10-15 minutes.
- Coat onions with flour mixture and fry until golden brown.
- Trim green beans and prepare an ice water bath.
- Boil green beans for 3-4 minutes, then cool in ice water.
- Sauté onions and mushrooms in canola oil until translucent.
- Add garlic and flour, then gradually whisk in milk and cream until thickened.
- Combine green beans with sauce and half of the fried onions, then bake at 375°F for 35-45 minutes.
- Top with remaining fried onions and bake uncovered for an additional 7-10 minutes.
