  • 4 garlic cloves, minced
  • 5 tbsp all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • Salt to taste
  • Fresh cracked black pepper to taste
  • 2 large yellow onions, thinly sliced (for frying)
  • 2 cups low-fat buttermilk
  • 3 cups all-purpose flour (for coating)
  • 12 tsp coarse kosher salt (less if using table salt)
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  • Soak sliced onions in low-fat buttermilk for 10-15 minutes.
  • Coat onions with flour mixture and fry until golden brown.
  • Trim green beans and prepare an ice water bath.
  • Boil green beans for 3-4 minutes, then cool in ice water.
  • Sauté onions and mushrooms in canola oil until translucent.
  • Add garlic and flour, then gradually whisk in milk and cream until thickened.
  • Combine green beans with sauce and half of the fried onions, then bake at 375°F for 35-45 minutes.
  • Top with remaining fried onions and bake uncovered for an additional 7-10 minutes.
