  • 1 cup cherry tomatoes, halved
  • 1 english cucumber, peeled and sliced
  • ½ small red onion, sliced
  • ¼ cup kalamata olives, pitted and halved
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoon fresh chopped dill
  • store-bought tzatziki sauce for serving
  • ¼ cup feta cheese plus more for serving
  • 46 individual pita or naan bread, warmed before serving

Instructions

  1. In a medium bowl or zip-top bag, combine chicken, yogurt, lemon juice, olive oil, garlic, vinegar, salt, pepper, and Italian seasoning. Mix well to coat the chicken. Marinate in the refrigerator for at least 30 minutes, up to 2 hours for more flavor.
  2. In a separate bowl, combine tomatoes, cucumbers, onions, olives, olive oil, salt, pepper, and fresh dill. Toss until evenly coated and season to taste.
  3. Heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Remove chicken from marinade and add to the hot pan in a single layer. Cook for about 10 minutes, turning occasionally, until chicken is golden brown and cooked through to 165°F. Work in batches if needed.
  4. Spread tzatziki sauce over warmed pita bread. Top with cooked chicken and a generous scoop of Greek salad.
  5. Finish with crumbled feta and additional fresh dill, then serve and enjoy.
