Instructions
- Whisk together gluten-free flour blend, baking powder, kosher salt, and xanthan gum in a medium bowl.
- Cream softened butter and granulated sugar until pale and fluffy.
- Add room temperature egg, egg yolk, vanilla extract, and almond extract; mix well.
- Gradually combine the dry ingredients; mix until dough forms.
- Divide dough into two discs, wrap in plastic, and refrigerate for at least one hour.
- Roll out one disc of dough to ⅛ inch thickness; cut cookies using cookie cutters.
- Chill cut cookies in the refrigerator for 30 minutes.
- Preheat the oven to 325°F (165°C).
- Bake cookies for 12 to 14 minutes until edges are golden.
- Cool on baking sheet for 3 to 5 minutes before transferring to wire rack.
- Decorate cooled cookies with royal icing and other decorations.
