Instructions

  • Whisk together gluten-free flour blend, baking powder, kosher salt, and xanthan gum in a medium bowl.
  • Cream softened butter and granulated sugar until pale and fluffy.
  • Add room temperature egg, egg yolk, vanilla extract, and almond extract; mix well.
  • Gradually combine the dry ingredients; mix until dough forms.
  • Divide dough into two discs, wrap in plastic, and refrigerate for at least one hour.
  • Roll out one disc of dough to ⅛ inch thickness; cut cookies using cookie cutters.
  • Chill cut cookies in the refrigerator for 30 minutes.
  • Preheat the oven to 325°F (165°C).
  • Bake cookies for 12 to 14 minutes until edges are golden.
  • Cool on baking sheet for 3 to 5 minutes before transferring to wire rack.
  • Decorate cooled cookies with royal icing and other decorations.
